Chickpea Salad with Sardines

– 1 cup cooked chickpeas (or canned, drained and rinsed)
– 1 handful of fresh arugula leaves
– ½ cucumber, sliced
– 2 sardines in olive oil (canned)
– A drizzle of olive oil
– Salt and black pepper, to taste
 
 

PREPARATION

 

1. Place the chickpeas on a plate as the base.

 

2. Add cucumber slices and fresh arugula leaves for crispness and peppery flavor.

 

3. Arrange the sardines on top of the salad.

 

4. Drizzle with olive oil, then season lightly with salt and black pepper.
