Lemon Sardine & Avocado Toast

– 1 can of Iconic Sardines in Spicy Olive Oil
– 1 slice of rustic bread, toasted
– 1 poached egg
– 1 small handful of arugula (rocket)
– 2–3 almonds, roughly chopped
– 2 tbsp mashed avocado
– Freshly ground black pepper
– Extra lemon olive oil (from the tin), optional

PREPARATION

 

1. Toast the bread and spread with mashed avocado.

 

2. Layer arugula on top for a fresh base.

 

3. Arrange sardines over the greens, letting the lemon oil soak in.

 

4. Poach the egg for 3–4 minutes, until the white sets but yolk stays runny.

 

5. Top the toast with the poached egg.

 

6. Finish with almonds, black pepper, and a drizzle of lemon olive oil.
