Sardines with Potatoes and Butter

– 3 Small boiled potatoes (skin on)
– 3–4 Sardines in spicy olive oil
– 2–3 Cubes of butter
– Fresh rosemary sprigs
– A drizzle of olive oil

PREPARATION

 

1. Boil the potatoes until tender, leaving the skin on.

 

2. While still warm, plate the potatoes and top with cubes of butter so they melt slightly.

 

3. Garnish the potatoes with fresh rosemary sprigs for aroma and flavor.

 

4. Place the sardines beside the potatoes, drizzling with a little of their olive oil.

 

5. Finish with an extra touch of olive oil on the plate if desired.
